Alchemy meets Science
Almost every food we make today, handed down from past traditions, is pasteurised by the time it hits the shelf. With Folk, I wanted to prove that food can connect us and support us, and still be alive, not only in a jar at a counter, but at scale. That meant building an in-house lab, implementing precise temperature control, and using technology with intention. The result is wild-fermented, raw kombucha that is still living in the bottle. When technology and nature stop competing and start collaborating, flavor deepen, complexity grows, and a living culture does what we cannot do alone. Easy? No. But innovation lives where nature and technology work together.
